Sticky Baked Chicken


Ingredients:

250g Boneless Chicken
1 tbs Olive oil
2 cloves of Garlic
1 tsp chilli flakes
Salt (as desired)
1 tbs Ginger
2 tbs Jaggery
2 tbs Sugar
2 cups Water
1 tbs Honey
1 tsp Lemon Juice

Method:

1. Take the olive oil in a saucepan and when it is heated up, add the ginger, garlic and chilli flakes to it. Let the flavours completely infuse in the oil.
2. In another pan, add water, sugar and jaggery. Keep stirring it at high heat till you get a (just a bit thick) sticky dressing.
3. Take a bowl and pour in the spices (in oil). Add on the sweet dressing and then some salt. Combine well.
4. Pour this dressing over the chicken pieces.*
5. Let the chicken sit in the refrigerator for at least an hour. (for the dressing to nicely flavour it)
6. Preheat the oven at 180 degrees C (350 degrees F) for 5 minutes. 
7. Bake the chicken for 10-15 minutes.
8. In a bowl, combine the honey, lemon juice and some chilli flakes.
9. Take the chicken out and brush a little dressing (honey & lemon) over it.
10. Bake it for 5 more minutes.
AND it's done!

*flattened a bit for nice and even cooking
