Parmesan and Herb Chicken Schnitzel



Ingredients:

2 chicken breasts 
200g of bread
Rosemary (dried/fresh)
Fresh parsley
Thyme (dried/fresh)
50g grated parmesan cheese
2 eggs, beaten with 4 tbs milk (don't beat it too much)
1 cup flour
Salt and Pepper
Red chilli powder


Method:

1. Flatten the chicken.
2. In a food processor, combine bread with some parsley, rosemary, thyme and parmesan, and season with salt and pepper. Process into breadcrumbs. Pour out onto a plate.
3. In another plate, combine flour,chilli powder, salt and pepper.
4. Dip the chicken into the flour (shake off excess), then into the egg mixture, and into the breadcrumbs. 
5. Throw breadcrumbs over the top and all over the chicken and press the crumbs in firmly to ensure a thick and even coating.
6. Pan-fry the chicken and repeat the same crumbing process with the other pieces of chicken. Fry the chicken for about 4 minutes on each side till golden brown and crisp.

*it'll go great with salads and some lemon
