Lemon Meringue Pie






For the crust

Ingredients:

1 1/2 cups all purpose flour
2 tsp white sugar (fine)
1 tsp salt
1/2 cup vegetable oil
2 tbs milk

Method:

1. Sift the dry ingredients together and combine them well.
2. Add the oil and milk to form a crumbly dough.
3. Take a 9-inch pie pan and pat the dough on the bottom and up the sides of the pan.
4. Poke holes in bottom and sides of the crust to stop it from rising.
5. Preheat the oven for 5 minutes at 200 degrees C (400 degrees F).
6. Bake the crust for 15 minutes or until light brown in the preheated oven.

STEP 1: check

For lemon curd

Ingredients:

1 1/2 cups fine sugar
9 tbs butter (softened)
3 eggs
3 yolks
1 cup fresh lemon juice

Method:

1. Cream the sugar and butter together using a whisk.
2. Add the eggs and the yolks one by one while you whisk.
3. Add the lemon juice to the mix.
(you will find that the mix starts to curdle, but don't worry, it'll become smooth when we move to the next step)
4. Transfer the mix to a medium hot pan.
5. Keeping the pan on low heat, stir the curd until it becomes smooth and there are no lumps seen. (make sure it doesn't come to a boil)
6. Shift the curd to a bowl and cover it with a plastic wrap.
7. Refrigerate the curd for at least 2 hours so that it becomes a bit thick.

STEP 2: check

For the meringue

Ingredients:

3 egg whites
3/4 cup caster sugar
1 pinch salt

Method:

1. Whisk the egg whites and salt together until stiff peaks are formed. (if you lift the whisk out of the bowl, the mixture should look fluffy and cling to them while the peaks remain stiff and moist-looking)
2. While whisking, gradually add the sugar until the mixture is stiff and glossy.

STEP 3: check

Now, comes the last step---the fun part---assembling the pie.

Pour the lemon curd in the crust and spread the meringue over the filling carefully,sealing the edges. 
Bake at 200 degrees C (400 degrees F) until meringue browns, about 6 minutes.
